The razor shell has a sweet taste, marked by a characteristic scent. It is usually cooked with a hint of garlic. To enhance this preparation La Paimpolaise has cooked the razor shell with Cider Brandy, that brings a fruity note to the original flavor with more amplitude in the mouth.
Fishing the razor clam must be the easiest fishing there is... like a child's play, especially during spring large tides.
Its shell is made of two long parts, that look like a knife's handle. These molluscs feed by filtering water.
Cream (milk), pout (fish), razor clams 22% (mollusc), cider brandy 1,1%, Millac sea salt, butter (milk), garlic, parsley, olive oil, seaweeds (wakame), pepper, thickener: agar-agar (algae extract).
