Red mullet migrate through the English Channel into the North Sea each spring. We combined the flesh of this attractive fish with salmon to produce our original, ever popular pâté recipe.
Red mullets usually live and swim in large schools on sandy or rocky bottoms, in low depths. Its name comes from the french word mulet or surmulet, another name for this fish with characteristic "barbels" (or whiskers) at its mouth.
