It’s common knowledge that those of refined palate cannot pass up on langoustines, which get the special French festive treatment here as we butter them up with a smidgen of duck foie gras. The liver brings out the sweet flavour of the langoustine to exquisite effect, for a guaranteed gourmet experience.
Also known as the "ladies of Guilvinec", langoustines are collected on the soft sandy-muddy bottoms of the Northern Atlantic shores. Nonmigratory, they only leave their shelter once the light is subdued and low to hunt and feed. They eat seaweeds and small animals such as sea urchin, shellfishes or sea worms.
