There’s no more natural way of preparing the noble lobster than with this special gastronomic recipe used during the winter feasts in Brittany.  Drawing out the dominant flavour by infusing the shells, we add a few spices and a tomato compote before finishing.

Considered as the finest shellfish of all, the brittanic lobster is tender and refined. Characterised by its dark blue color with white specks, it can weight up to 8kgs. Ruthless predator, the lobster hunts by night (mainly of crabs, mussles, sea snails, sea warms, urchins, starfishes and fishes), it also eats occasionally seaweeds.
