The meat of langoustines is fine and ferm and has a delicate flavour. By cooking them with just a light touch of anis, we preserve all of its nature and texture.
Also known as Dublin Bay prawns, or ‘demoiselles’ by the French on account of their attractive colour, delightful flesh and delicate aroma, they are in a class of their own.
